Perilla (Perilla frutescens) — known as shiso in Japan and kkaennip in Korea — is a fragrant annual herb in the mint family that thrives in warm conditions. It prefers well-draining, moderately fertile soil with a pH of 6.0–7.0. Start seeds indoors 4–6 weeks before last frost at 18–22°C, or direct sow after the last frost. Seeds have a low and inconsistent germination rate; sow 3–4 seeds per position and thin to the strongest. Lightly cover seeds — they need some light for germination. Space plants 30–45 cm apart in a full sun to partial shade position. Water regularly to maintain even soil moisture; drought stress causes premature bolting and small, tough leaves. Feed monthly with a balanced fertiliser; high nitrogen produces the large, tender leaves preferred for table use. Pinch out flower spikes as they form to extend the leaf harvest season. Both green (ao-shiso) and red/purple (akajiso) varieties are grown identically.
