True yams (Dioscorea spp.) require a long, hot, humid growing season of 8–10 months. They need deep, loose, fertile, well-draining soil with a pH of 5.5–6.5 — compact or stony soil prevents tuber development. Prepare beds to 60 cm depth, incorporating copious compost. Plant cut setts (sections of tuber with at least one eye) at 7–10 cm depth and 1 metre apart in rows 1.5 metres apart. Provide a sturdy trellis or pole at least 2 metres tall — the vigorous vines must climb to maximise leaf area for tuber development. Water regularly during the growing season (at least 25 mm per week), but reduce dramatically as the vines begin to yellow and die back, signalling the start of dormancy. Feed monthly with a balanced fertiliser high in potassium. Do not confuse with sweet potato — true yams are a completely different botanical family (Dioscoreaceae).
