Chilli peppers need a long, hot growing season — start seeds indoors 10–12 weeks before last frost, maintaining soil temperature of 25–30°C for germination (use a heat mat). Transplant only when soil temperature reliably exceeds 18°C. Grow in well-drained, fertile soil at pH 6.0–6.8, incorporating compost but avoiding excess nitrogen which delays fruiting. Space plants 45–60cm apart in rows 60–90cm apart. Plant at nursery pot depth. Water moderately — 2.5cm per week — allowing the top 3cm to dry between waterings. Mild water stress during fruit development increases capsaicin (heat) production. Mulch heavily with black plastic to raise soil temperature and retain moisture. Feed with a balanced fertiliser at transplant, switch to a low-nitrogen, high-phosphorus and potassium feed (5-10-10) at flowering, then a potassium-rich fertiliser (0-10-20) once fruiting begins. In cool climates, grow under glass or use the warmest, most sheltered south-facing wall position available.
