Romanesco (Brassica oleracea var. botrytis) is grown exactly like cauliflower but requires precise cool temperature management — the fractal head (curd) only forms and holds correctly within a narrow 10–20°C range. Start seeds indoors 6–8 weeks before transplanting; in most climates, this means starting in midsummer for an autumn harvest. Transplant into rich, well-draining soil with a pH of 6.0–7.0 that has been heavily amended with compost and a balanced base fertiliser. Space plants 60–75 cm apart. Consistent moisture is essential — water deeply and evenly at 25–30 mm per week; drought stress causes loose, aborted head formation. Feed with a high-nitrogen fertiliser every 2–3 weeks during establishment then switch to higher potassium when heading begins. As the head starts to form, tie some outer leaves loosely over it to protect it from sun, which can bleach and damage the delicate chartreuse colour.
