Shallots are grown from sets (small bulbs) rather than seed in most cases, producing far earlier and more reliably. In temperate climates, plant sets in fall (October–November) for early summer harvest, or in early spring as soon as soil can be worked. Push sets into well-drained, fertile soil with pH 6.0–7.0 so just the tip protrudes above soil level, spacing 15–20cm apart in rows 30cm wide. Shallots prefer lighter, sandier soils than onions — avoid heavy clay. Incorporate a balanced fertilizer at planting. Apply nitrogen fertilizer 4 weeks after planting and again when bulbs begin to swell. Water moderately — 2.5cm per week — reducing to nothing once foliage tips begin to yellow and fall over. Each set multiplies into a cluster of 4–8 daughter bulbs. In warm climates, refrigerate sets for 4 weeks before planting to simulate winter dormancy.
