Step-by-Step Growing Guide

Galangal (Alpinia galanga — greater galangal) requires tropical warmth and humidity — minimum sustained temperatures of 15–20°C, high humidity, and no frost. It thrives in rich, moisture-retentive, well-draining soil with a pH of 5.5–7.0, heavily amended with compost and leaf mould. Plant rhizome sections 5–8 cm deep with at least 2–3 growing buds visible, spaced 60 cm apart in a partially shaded or full-sun position in tropical climates. Water frequently and consistently — galangal wilts rapidly under dry conditions. Feed monthly with a balanced fertiliser high in potassium. The plant reaches 1.5–2 metres in height with spectacular tropical foliage and, in optimal conditions, small white and pink orchid-like flowers. In temperate climates, grow in large containers indoors or in a heated greenhouse with a minimum of 15°C year-round. Container-grown plants in pots of minimum 40-litre capacity produce harvestable rhizomes in 2–3 years.

Common Pests & Problems

Rhizome rot (Pythium and Fusarium spp.) occurs in waterlogged soil — ensure excellent drainage even while maintaining frequent watering. Red spider mite infests plants in dry, warm conditions particularly in greenhouse cultivation; mist foliage regularly to maintain humidity and apply neem oil. Soft rot bacteria enter through physical damage to rhizomes; handle carefully at planting and avoid injuring rhizomes during cultivation. Root-knot nematodes (Meloidogyne spp.) can be problematic in tropical soils; use certified disease-free planting material and apply beneficial nematodes. Scale insects can affect the stems of greenhouse-grown plants; treat with horticultural oil spray.

Harvest & Storage

Young galangal rhizomes can be harvested from 8–10 months after planting when they are still pale pink and creamy — young rhizomes have a more delicate, floral flavour suited to fresh use in Thai cooking. Mature rhizomes at 12–18 months are harder, with more pronounced pine and camphor notes, better for curry pastes. Lift the entire clump with a fork and separate the rhizomes from the main plant, leaving a portion with growing buds to replant. Fresh galangal stores in the refrigerator for 3–4 weeks wrapped in paper. For longer storage, peel, slice, and freeze for up to 6 months. Dried galangal (laos powder) keeps for a year but has significantly different, less complex flavour.

Alpinia galanga (greater galangal) is the primary culinary species used in Southeast Asian cooking — large rhizomes with a piney, citrusy, sharp flavour quite distinct from ginger. Alpinia officinarum (lesser galangal) produces smaller rhizomes with a hotter, more ginger-like peppery flavour; used in Chinese medicine and European medieval cooking. Kaempferia galanga (kencur or aromatic ginger) is a smaller, ground-hugging species with very different flat rhizomes used in Balinese and Indonesian cooking with a unique camphor-eucalyptus flavour.
